Happy New Year! Honey Cornflake Cookies

Need a quick, easy recipe for a New Year’s Party? Look no further. This Honey Cornflake cookie recipe uses only 3 ingredients and is tasty as can be. For variation, divide recipe in half and use a different flavored honey for each batch.


Honey Cornflake Cookies
4 cups cornflakes
6 tablespoons of melted butter
1 cup honey
Pecan or other nuts (optional)

Preheat oven to 300 °F. Put mini cupcake liners into mini cupcake pan.

In a large bowl, gently crush cornflakes into slightly smaller pieces. Pour melted butter and honey over cornflakes and stir. Scoop a spoonful of mixture into each mini cupcake liner. Sprinkle pecans or other nuts on top of cookies, if wanted.

Bake at 300 °F for 20-23 min. Let cool and serve!

Desserts from Beth Dooley

Here are two quick and easy dessert recipes for you. Make these for any of your holiday gatherings to delight your guests.


Chocolate-Honey Semi-Fredo
1 cup heavy cream
¼ cup cocoa powder
¼ cup honey
1 teaspoon vanilla extract
½ cup whole milk Greek yogurt
Fresh berries for garnish, optional



Whip the cream and cocoa powder until stiff peaks form and then whip in the honey and vanilla to taste. Fold in the yogurt. Pour into a large flat baking dish and place in the freezer until semi firm. Cut into squares and serve garnished with the berries.


This next recipe is modified from what Beth Dooley served us at the Arboretum in September because since she’s a chef, she doesn’t always work from a recipe. She decided that day to spontaneously whip up some macaroons for us. Knowing the ingredients and some of the amounts, this is the recipe I deduced. Raisins or dried cranberries could be added or substituted for the pumpkin seeds.


Honey Macaroons with Pumpkin Seeds
5 egg whites
1 teaspoon vanilla
1/3 cup honey
3 cups (about 10 oz) unsweetened shredded coconut
½ cup pumpkin seeds





Preheat oven to 350 degrees. Whip egg whites and vanilla until stiff. Stir in honey, shredded coconut and pumpkin seeds. Scoop into little bundles and place on a pan to bake for 16-20 minutes until lightly golden.
